Felix Laureano’s pictorial book Recuerdos de Filipinas, which chronicles the customs and everyday life of Iloilo and Panay, contains one of the earliest accounts of Chicken Inasal. The book, which was published in Madrid, Spain in 1895, identified inihao nga manuc as one of the goods displayed in the picture of a calendria, or food store. It was said that inihao nga manuc is the Spanish word for grilled or roasted chicken, pollo asado.

In the Visayas, chicken inasal is a staple meal. In the city of Bacolod, a whole street market is devoted to native food, with inasal being one of the specialties. A sign that says “Manokan Country” (literally, “Chicken Country” in Hiligaynon) is located in the center of the market.
